Vegan Chickpea Stir-Fry
This Vegan Chickpea Stir-Fry is a quick and tasty way to make dinner that is full of veggies and protein. It's a filling meal any night of the week because it has chickpeas, colorful bell peppers, and crunchy vegetables all mixed together in a tasty sauce.
Ingredients:
- 2 cups chickpeas, cooked
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 cup broccoli florets
- 1 cup snap peas
- 3 tablespoons soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch
- 2 tablespoons water
- Cooked rice or quinoa, for serving
- Fresh cilantro, for garnish
Instructions:
In a small bowl, mix soy sauce, maple syrup, sesame oil, cornstarch, and water to make the sauce
Heat a large skillet over medium heat
Add a splash of oil
Add onion, garlic, and ginger to the skillet
Cook until fragrant, about 2 minutes
Add bell peppers, broccoli, and snap peas
Stir-fry for 5-7 minutes until vegetables are tender but still crisp
Add chickpeas and sauce to the skillet
Stir well to coat everything evenly
Cook for another 2-3 minutes until the sauce thickens
Serve the stir-fry over cooked rice or quinoa
Garnish with fresh cilantro before serving
