Lentil Sweet Potato Coconut Curry Bowl
This vegan curry bowl with lentils, sweet potatoes, and coconut is a hearty, healthy meal that tastes great. Smooth coconut milk, hearty lentils, and sweet potatoes come together to make a dish that's perfect for a cozy dinner.
Ingredients:
- 1 cup red lentils
- 2 medium sweet potatoes, peeled and diced
- 1 can 13
- 5 oz coconut milk
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1 tablespoon coconut oil
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Cooked rice or quinoa, for serving
Instructions:
Put coconut oil in a big pot and heat it over medium-low heat
It will take about 5 minutes of cooking after adding the chopped onion and garlic
Add turmeric, cumin, coriander, and curry powder
Stir and cook for one to two minutes, until the spices smell good
Dice the sweet potatoes and red lentils and add them to the pot
Stir to mix
Mix in the coconut milk and just enough water to cover the food, then bring it all to a simmer
Turn down the heat, cover, and let it cook slowly for twenty to twenty-five minutes, until the lentils and sweet potatoes are soft
Add pepper and salt to taste
Add cooked rice or quinoa to the curry and top it off with fresh cilantro
