Jalapeno Chicken Sandwich with White BBQ Sauce
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 jalapeno peppers, sliced
- 4 slices of cheddar cheese
- 4 slices of bread your choice
- 1/2 cup mayonnaise
- 2 tablespoons white vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons olive oil
- Butter for grilling
Instructions:
Warm up your grill or pan on the stove by setting it on medium-high heat
Put the Dijon mustard, garlic powder, onion powder, cayenne pepper, salt, and pepper in a small bowl
Add the mayonnaise and mix them together
This is the white BBQ sauce
Leave it alone
Add salt and pepper to the chicken breasts, and then drizzle them with olive oil
For about 5 to 6 minutes on each side, or until fully cooked and no longer pink in the middle, grill the chicken over medium-high heat
In the last few minutes of grilling, put a slice of cheddar cheese on top of each chicken breast and a slice of jalapeno
Put the lid back on the grill to melt the cheese
Put a little white BBQ sauce on one side of each slice of bread while the chicken is cooking
Take it off the grill and set it aside once the chicken is done and the cheese is melted
Put a griddle or big pan on medium heat and add a little butter to coat the bottom
Turn the bread slices over so that the sauce side is facing down
Put the grilled chicken breasts with jalapenos and cheese on two of the slices of bread
Add the last slices of bread on top, sauce side up
The bread should be golden brown and crispy, and the cheese should be melted
Grill the sandwiches for two to three minutes on each side
Take the sandwiches off the griddle and let them cool for one minute
Then cut them in half across the middle
