Smoked Pulled Pork Sandwiches with Sweet Coleslaw
Ingredients:
- 2 lbs smoked pulled pork
- 8 sandwich buns
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons honey
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups shredded cabbage
- 1 cup shredded carrots
- 1/4 cup chopped fresh parsley
- 1/4 cup thinly sliced green onions
- 1/2 cup granulated sugar
- 1/4 cup apple cider vinegar
- 1/4 cup vegetable oil
Instructions:
If you want to make the coleslaw dressing, mix mayonnaise, honey, Dijon mustard, salt, and black pepper in a small bowl with a whisk
Shred the cabbage, carrots, parsley, and green onions and put them all in a large bowl
Add the coleslaw dressing to the cabbage mix and toss it around so that it's all covered
Chill until you're ready to use
Granulated sugar, 1/4 cup apple cider vinegar, and vegetable oil should all be mixed together in a saucepan
Over medium heat, stir the mixture every now and then until the sugar is gone
Mix in the smoked pulled pork
For about 5 to 7 minutes, heat the pulled pork mixture until it's warm all the way through
If you want to, toast the sandwich buns
Put a lot of smoked pulled pork on the bottom half of each bun before putting the sandwiches together
Put some sweet coleslaw on top and then put the top half of the bun on top of that
Serve right away and enjoy!
